Barley (Hordeum Vulgare) is a cereal belonging to the Poaceae family.
It is one of the oldest cereals cultivated by man and was one of the most common foods in ancient Greece.
It is characterised by its long ears. If the grass is harvested before the seeds appear, its nutritional composition is different from that of the adult plant, which has a much richer nutritional potential.
When barley grass is dried and then cold-ground, it retains all its nutrients.
