How to choose the right banana?

The more green spots the banana has, the less ripe it is and the longer it will keep. It can then be used for cooking. On the other hand, it must be left to ripen before being eaten raw, as it is indigestible at this stage. It is ready to eat when the flesh gives slightly under pressure and the rind is yellow and slightly tiger-coloured, without any green colouring. If it has brown or black spots, it has passed this stage and is more suitable for cooking. Note that small bananas tend to be sweeter than large ones.

When to peel the banana? Do not peel the banana until you are ready to eat or prepare it, as the flesh oxidises when exposed to air. If you must peel them first, add a little lemon juice.

Storage

Room temperature: Since bananas darken when exposed to cold, it is best to store them at room temperature, in a fruit bowl or on the counter. To speed up ripening, place green bananas in a brown paper bag.
Freezer: Peel and freeze whole, sliced or pureed. Sprinkle with lemon juice on the way out of the freezer to prevent oxidation.

Contraindications

Despite its health benefits, the banana is still an allergenic fruit for many people. It is therefore advisable to be vigilant and watch out for signs of a possible oral allergy, which can have serious consequences if not treated in time.
