Eating quail eggs is not new.
2,000 years ago, the Egyptians bred quails for the pleasure of eating fine, tasty meat, but more importantly because the quail egg could relieve asthma.
Much later, the Japanese quail was recognised as producing the best eggs.
Today, after crossbreeding between Japanese and European quails, the quail eggs that can be eaten still have undeniable virtues due to genetic inheritance.
The main characteristic of the quail egg is that it is the most nutritious egg on the planet, at least according to current knowledge.
It is said to be the symbol of perfect balance between all its components.
Nutritionally, the quail egg is:
- Rich in phosphorus, iron, vitamins B1, B2
- Completely cholesterol-free
- Rich in ovomucins, an enzyme present in the albumen of all birds, but particularly in quail eggs, and in egg inhibitors, which are particularly effective against psoriasis or even emphysema and other allergies.
Good to know: Despite its small size, the quail egg is far superior to the chicken egg in terms of nutritional value.

It is in everyone's interest to eat quail eggs regularly, given the importance of their therapeutic and dietary properties.
Curing raw quail eggs
In the event of an allergy, if you are in contact with the allergen in question and the crisis is at its most acute, it is advisable to follow an 18-day quail egg cure.
This consists of swallowing one quail egg every morning on an empty stomach, then two, then three on the following days, and finally six quail eggs on each of the last three days of the cure.

The diet
Of course, you can eat quail eggs regularly, just like chicken eggs.
They can be eaten raw (gobé), in an omelette, hard, on the plate, or used in certain recipes.
Because of their small size, the cooking time must be reduced.
As a guide, 4 minutes is enough to cook a quail egg.
For a quail egg casserole, the maximum cooking time is 6 minutes in a bain-marie in the oven at gas mark 6.
